When choosing stainless steel sheet for kitchen equipment, the grade decision is between 304 and 430 for most projects. This guide compares the two grades on corrosion, formability, food contact compliance and cost, so that buyers and engineers can specify the right sheet for commercial kitchens, food prep surfaces, sinks and exhaust hoods.

Commercial kitchen equipment is built from stainless steel sheet because the metal resists rust, tolerates daily cleaning chemicals, and stays hygienic over years of food contact. Two grades dominate procurement for this segment, austenitic 304 and ferritic 430, and the choice between them depends on whether the surface will see water, salt, acids and hot washdowns, or a drier, indoor environment. Specifying the wrong grade leads to early pitting rust, staining on visible panels, and warranty disputes, so the grade decision is one of the most consequential calls on the kitchen equipment RFQ.

Why 304 Is the Default for Most Kitchen Equipment

304 stainless steel sheet contains about 18% chromium and 8% nickel, giving it strong corrosion resistance in damp, salty and mildly acidic conditions. For kitchen equipment that sees water, food acids, salt from cooking and frequent detergent washdowns, 304 is the safest default, and it is the grade most OEM kitchens in Europe, North America and Asia actually fabricate from. The grade is also non-magnetic in the annealed condition, which is a quick check buyers can use at incoming inspection. For fabricated sinks, drainer tops, splashbacks and front panels of cooking lines, 304 in 2B or BA finish is almost always the correct specification.

Where 430 Stainless Steel Sheet Is the Right Choice

430 stainless steel sheet contains about 16–18% chromium with no nickel, which makes it less expensive and magnetic, but also less corrosion resistant. For kitchen equipment that stays dry, has limited food contact and is wiped rather than soaked, 430 is a sensible cost-down grade. Typical applications are decorative side panels of cooking ranges, backsplashes that are behind a wall, range hood outer shells, and indoor kitchen cabinet doors. If the sheet will sit in a continuously wet zone, near dishwashers, or in contact with salt and acidic foods for long periods, 430 is not the right pick and will start to show surface rust within months.

Hygiene, Cleaning and Food Contact Considerations

For surfaces that touch food, the grade alone is not enough, the surface finish matters as well. A smooth 2B or BA finish on 304 stainless steel sheet is easier to wipe clean and resists biofilm better than a coarse No.4 or hairline finish, which is why prep counters and backsplashes are often supplied in 2B even when visible panels are brushed. In wet zones, avoid leaving 430 in contact with standing water overnight, and do not use steel wool or carbon-steel brushes on either grade, since embedded iron particles will rust and stain the surface regardless of grade. For food contact compliance, both 304 and 430 are generally recognized as safe under common food contact regulations, but 304 is the conservative choice for products that will see acidic foods, salt and hot cleaning cycles.

What to Specify on the Kitchen Equipment RFQ

State the grade explicitly as 304 (1.4301 / SUS304) or 430 (1.4016 / SUS430), together with the finish (2B, BA, No.4, or hairline), the thickness, and the sheet size. For food prep and wet zones, default to 304 in 2B or BA finish; for dry decorative panels, 430 is acceptable and saves cost. Request the mill certificate showing the actual chemistry and confirm the nickel content if the grade is being switched to avoid a 304 substitute. For export orders, also confirm whether the standard 4x8 sheet, metric size, or a custom cut-to-length coil is expected, so that the kitchen equipment fabricator receives stock in the form that matches their press brake and laser cutting workflow.
